Vegan Burrito Recipe

Hello there!
Today we’ve got a very easy, delicious recipe for you: the vegan burrito, stuffed with a spicy mushroom filling.


Here’s what you need (for 2 servings)

For the mushroom-stuffing:

  • 500g mushrooms
  • 1 big red onion
  • 2 Spring onions
  • 2 garlic cloves
  • 1 chili pepper
  • 1/2 orange pepper
  • tomato paste
  • olive oil
  • Spices: Salt & pepper, paprika, cayenne pepper

What else:

  • 4 burrito wraps (we like the gluten free version)
  • 1 avocado
  • 8 cherry tomatoes
  • 1/2 can of kidney beans
  • boiled rice
  • lettuce


How you make it

Preparation time: 20-25 minutes.

Cook the rice. Start with chopping all the ingredients for the stuffing into very small pieces. Roast them gently with some olive oil, add the mushrooms and wait for a few minutes until the mushrooms are shriveled. Add the spices and the tomato paste. Add as much of it as you like until the stuffing becomes a red, spicy filling.

Add one ingedient beside the other on the burrito bread and roll it all up, tucking in the sides to ‘close’ it. Take a knife to cut the roll into two halves and serve on a plate.

Variant: You could even go for a super low-in-calories version by wrapping all the ingredients up in some big leaves of lettuce instead of using burrito bread.
